Coming straight from karting, Jouffreau made his NASCAR debut in the Club Challenge in 2021 driving for Speedhouse.

2022: Jouffreau took the next step in his NASCAR career, moving to EuroNASCAR 2 full-time. He closed the season 9th in points with two top-5 and six top-10 finishes.

2023: Jouffreau moved to RDV Competition, competing in EuroNASCAR 2 and part-time in EuroNASCAR PRO. With a total of three EuroNASCAR 2 race wins, eleven top-5 finishes and twelve top-10 results in twelve races, Jouffreau grabbed the EuroNASCAR 2 championship crown at the spectacular EuroNASCAR Finals at Circuit Zolder, Belgium.

In 2024, Paul Jouffreau embarked on his first full EuroNASCAR PRO campaign with RDV Competition, piloting the No. 3 Ford Mustang. Demonstrating remarkable adaptability and speed, he secured two race victories, including a notable win at the regular-season finale in the Czech Republic -Jouffreau also clinched the Junior Trophy, awarded to the top driver under 25, and concluded the season as the EuroNASCAR PRO runner-up, amassing 547 points.

2025: Jouffreau is chasing his first NASCAR Euro Series PRO title on the #3 RDV Competition Ford Mustang.
